Oven Kalua Pork
1/4 cup Hawaiian Rock Salt
5-6 tablespoons liquid smoke (Mrs. Wright's Hickory is best)
6-8 lbs pork butt or shoulder roast
6-8 ti or banana leaves (you can substitute spinach leaves)
Rub the rock salt and liquid smoke into the pork surface. Wrap the meat in the leaves; seal in heavy aluminum foil. Bake, covered, at 500 degrees for 30 minutes, reduce the heat to 325 degrees and bake for 3-1/2 hours. shred the meat into bite-sized pieces and serve with the roasting liquid.
